Capers & Halibut

Serves 4

1 Tbsp olive oil

2 (8oz) Halibut Steaks

1/2 c white wine (Chardonnay)

1 tsp chopped garlic

1/4 c butter

3 Tbsp Capers; with liquid

Salt & Pepper

Heat oil in pan over medium-high heat. Fry halibut on all sides until nicely browned. Remove and set aside on warm plate. Pour wine in pan, scrape brown bits from bottom of pan. Reduce the wine to almost nothing, stir in garlic, butter and capers. Season with salt & pepper. Simmer 1 minute. Return halibut to pan. Spoon sauce over the steaks. Cook until the fish flakes easily. Serve immediately with sauce poured over it. Goes well with “Asparagus Cashew Rice Pilaf”
